White chocolate and berry pancakes- step by step instruction guide!

Step 1
Place the flour and salt in a large mixing bowl and make a well in the centre. Pour in the milk and crack in the egg. Using a whisk, slowly incorporate the flour into the wet ingredients, working from the centre outwards, until the mixture forms a smooth, lump-free batter. Finally, add the vegetable oil and stir thoroughly to combine, ensuring the batter is silky and ready for cooking.

Step 2
Heat a large frying pan over a medium heat until it’s evenly warm, ensuring the surface will cook the pancakes gently without burning. Add a small amount of oil to the pan, then use a piece of kitchen paper to smear it evenly across the base, creating a thin, non-stick layer that will help your pancakes cook perfectly and release easily. Once the pan is ready, pour in a small ladleful of batter and immediately swirl the pan to spread it out into a thin, even layer. The key is to move quickly so the batter covers the entire base smoothly, creating a delicate pancake that will cook evenly.

Step 3
Cook for 1–2 minutes, keeping a close eye on the edges. You’ll know it’s ready to flip when the edges lift slightly and the centre has set but is still soft. Carefully lift the edge of the pancake with a spatula to check that the underside is a light, golden-brown — not too dark, just a perfect, warm tone. This careful attention ensures each pancake is thin, tender, and lightly crisp around the edges, creating the ideal base for your toppings of berries and melted white chocolate.

Step 4
Carefully flip the pancake over and cook the other side for 30–40 seconds, just until it’s lightly golden and fully set. Transfer it to a warm plate and cover with a clean tea towel to keep it soft and warm while you cook the remaining pancakes. Repeat the same process with the rest of the batter, cooking each pancake individually so that you end up with four perfectly thin, golden pancakes, all ready to be stacked and served with your berries and melted white chocolate.

Step 5
For the topping, place the white chocolate in a heatproof bowl set over a pan of gently simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir occasionally until the chocolate has melted into a smooth, glossy consistency. Alternatively, you can melt the chocolate in the microwave in short bursts of 15–20 seconds, stirring well between each interval to prevent it from burning and to achieve a silky, pourable texture perfect for drizzling over your pancakes.

Step 6
Place a pancake on each serving plate and evenly divide the frozen berries between them. Drizzle the warm, melted white chocolate generously over the top, letting it cascade over the edges. Serve immediately so the pancakes stay piping hot and the chocolate silky. The heat from the pancakes and chocolate will start to soften the berries, but keep them slightly chilled — it’s the delightful contrast between the warm pancakes, gooey chocolate, and cool, juicy berries that makes this dessert truly special.

White chocolate and berry pancake-

Pancakes are at their absolute best served straight from the pan, golden, tender, and piping hot, but if you need to make them in advance, there’s an easy way to keep them just as delicious. Once cooked, stack the pancakes carefully with a sheet of baking paper between each one to prevent them from sticking together. This method helps them retain their soft, delicate texture and makes them easy to reheat without losing their lightness.

When it’s time to serve, warm the pancakes gently. A low oven for 10–15 minutes works perfectly, slowly bringing them back to that just-cooked warmth. Alternatively, the microwave can be used in short 10-second bursts, checking after each interval to prevent them from becoming rubbery. Reheating carefully ensures that each pancake stays fluffy and ready to receive its toppings.

For the best experience, serve the pancakes on warmed plates. This keeps them hot longer and preserves the delightful contrast between the warm pancakes and melted white chocolate and the slightly chilled, juicy berries. It’s this play of temperatures and textures that makes the dish feel special — indulgent, yet simple, perfect for Pancake Tuesday, a festive breakfast, or a show-stopping dessert for a dinner party. Each bite is a balance of warm, creamy, and fruity flavours that’s impossible not to enjoy.
