Loaded canape crisps- ingredient list!
250g/9 oz of ricotta
Two tablespoons of plain yoghurt
Two lemons, only the zest
200g/7oz of coarsely chopped prosciutto
Two 150g packets of salted, thick-cut crisps
Three tablespoons of pickled pink onions
One tablespoon of crunchy chilli oil
One tablespoon of heated honey and a small handful of roughly chopped fresh chives
Black pepper, freshly ground
Loaded canape crisps- step by step instruction guide!
Step 1
Add the ricotta, Greek-style yoghurt and finely grated lemon zest to a medium bowl. Using a whisk or a spatula, beat everything together until the mixture is smooth, light and creamy, with no lumps remaining. The yoghurt loosens the ricotta while the lemon zest adds a fresh, citrusy lift that balances the richness. Season generously with freshly ground black pepper, then give the mixture one final stir to ensure the seasoning is evenly incorporated. Taste and adjust the pepper if needed before setting aside until you're ready to assemble.
Step 2
Heat a non-stick frying pan over a medium heat, then lay the prosciutto slices in a single layer. Cook for 2-3 minutes, turning halfway through, until the slices are golden, crisp and crunchy around the edges. As the prosciutto cooks, it will release its natural fat and become deliciously crisp. Transfer to a plate lined with kitchen paper to drain and cool slightly - it will continue to crisp up as it cools. Once cool enough to handle, roughly break or tear the prosciutto into bite-sized pieces.
Step 3
Arrange the ridged crisps on a large serving platter or board in a single layer. Spoon a generous dollop of the ricotta mixture onto each crisp, spreading it gently with the back of the spoon if needed so it's evenly distributed while still leaving plenty of texture. Try not to overload the crisps, ensuring there's enough room for the remaining toppings to shine.
Step 4
Top each crisp with a few pieces of the crispy prosciutto, followed by a scattering of pink pickled onions for a pop of colour and tangy sweetness. Finish with a generous drizzle of chilli oil over each crisp, allowing it to seep into the ricotta and add a gentle kick of heat. Serve immediately while the crisps are still perfectly crunchy, with any remaining toppings and chilli oil on the side for guests to help themselves.
Step 5
Drizzle the hot honey generously over the topped crisps, letting its sweet heat mingle with the creamy ricotta and spicy chilli oil. Scatter over the finely chopped chives for a fresh burst of colour and flavour, then finish with a generous crack of freshly ground black pepper. Serve immediately while the crisps are perfectly crunchy and the prosciutto is still crisp. For the ultimate hosting combination, pair with a refreshing Cucumber Pickle Soda (see recipe tips), whose bright, tangy flavours perfectly balance the rich, salty and spicy toppings.
Loaded canape crisps- recipe tips!
The ricotta whip, crispy prosciutto and pickled onions can all be prepared in advance, making this an ideal recipe for stress-free entertaining. Store each element separately, then assemble the crisps just before serving to keep them at their best. Avoid topping the crisps too far ahead, as they will begin to soften after around an hour.
You can easily adjust the spice levels to suit your taste. For a milder flavour, simply use less chilli oil or hot honey. If you prefer more heat, finish each canapé with an extra drizzle of chilli oil or a pinch of chilli flakes before serving.
To make this recipe vegetarian, replace the crispy prosciutto with a generous scattering of toasted seeds or chopped toasted nuts, such as pumpkin seeds, pistachios or almonds. They'll add plenty of crunch and savoury flavour while complementing the creamy ricotta just as well.
These canapés are delicious served with a refreshing Cucumber Pickle Soda. To make enough for 6 people, fill a large jug with ice and pour over 1 litre (1¾ pints) sparkling water. Stir in 4 tablespoons of pickle brine (from a jar of pickles), the juice of 1 large lemon and ½ cucumber, shaved into ribbons using a vegetable peeler. Finish with a small handful (about 5g) of freshly chopped dill, gently stir everything together and serve immediately. The bright, tangy flavours of the drink perfectly balance the rich, creamy and spicy toppings, making it an ideal pairing for parties, barbecues and relaxed summer entertaining.
