150g/5oz pancetta cubes or a 175g/6oz chunk of smoked pancetta with the peel removed

Three cloves of garlic, a handful of fresh flatleaf parsley leaves, three large free-range eggs, finely chopped pecorino sardo maturo (mature Sardinian pecorino), finely grated salt, and freshly ground black pepper
