One tablespoon of wholegrain mustard
150 ml/5 fl oz beef stock
200g/7oz of finely cut, lean sirloin steak with visible fat removed
Fat-free simple fromage frais, 100ml/3½fl oz
Two tablespoons of finely chopped gherkins
Two tablespoons of freshly chopped chives, salt, and freshly ground black pepper
