Easter rocky road- step by step instruction guide!

Step 1
Start by preparing a 20 by 30 centimeter or 8 by 12 inch baking tin for your rocky road. Take a sheet of baking paper and carefully line the base and sides of the tin, making sure it fits snugly into the corners and edges. Press the paper down gently so it sticks to the sides, leaving a slight overhang on two opposite sides. This overhang will make it much easier to lift the finished rocky road out of the tin once it has set. Taking the time to line the tin properly ensures that your treat will hold its shape, be easy to remove, and slice neatly into squares or bars without sticking to the tin.

Step 2
Place the dark and milk chocolate pieces into a large heatproof bowl. Add the golden syrup and butter to the bowl, ensuring all the ingredients are together. Prepare a pan with a small amount of water and bring it to a bare simmer. Set the heatproof bowl over the pan, making sure the bottom of the bowl does not touch the water. This gentle heat will melt the chocolate slowly and prevent it from burning.

Step 3
Stir the mixture occasionally as it melts, combining the chocolate, butter, and syrup until it becomes smooth, glossy, and fully blended. Once everything is melted and uniform, carefully remove the bowl from the heat. Allow the mixture to cool for about five minutes. It is important to let it cool slightly because if it is too hot, the marshmallows added later will melt and lose their shape, affecting the texture of your rocky road.

Step 4
Take the chocolate mini eggs and cut most of them in half, leaving a few whole for decoration. Set aside about one third of the eggs, including the whole ones, to use later on top of the rocky road. Gently fold the remaining halved chocolate eggs into the melted chocolate mixture along with the broken biscuits, marshmallows, nuts, and raisins. Stir carefully until all the ingredients are evenly coated and combined, ensuring every piece is surrounded by chocolate without crushing the marshmallows.

Step 5
Spoon the rocky road mixture carefully into the prepared baking tin, using the back of a spoon to press it down and spread it evenly so that it forms a smooth, level layer. Take your time to make sure the mixture reaches all the corners of the tin and is packed gently but firmly, helping the bars hold together once set. Once the mixture is evenly spread, take the reserved whole and halved mini eggs and scatter them across the top. Press them in lightly so they stay in place as the chocolate sets. This step not only adds extra chocolatey bursts in every bite but also gives the rocky road a festive, colorful finish that is as visually appealing as it is delicious, making it perfect for Easter celebrations.

Step 6
Place the tin in the refrigerator and allow the rocky road to chill for at least one hour, or until it is completely firm. Chilling ensures that the chocolate sets properly and that all the ingredients hold together when sliced. Once it has fully set, use the overhanging baking paper to lift the rocky road out of the tin. Cut it into bars or squares of your desired size, ready to serve as a delicious, chocolatey Easter treat.
