Delicious fish tacos- ingredient list!
This recipe does have a very full ingredient list however just bare with me- each ingredient is worth it for the delicious taste and the prep is super easy! Also several ingredients are optional such as the hot sauce, can be replaced or pickled onions can be ditched, etc.
Pickled onions-
One little red onion, cut in half, peeled, and cut into half-moons
Just the juice from two limes
Regarding the spicy sauce-
125g/4½oz mayonnaise
Two teaspoons of spicy sauce, such as gochujang paste, to taste
For the corn relish-
One 198g/7oz can of drained sweetcorn and one roughly chopped fresh red chilli (de-seed if you don't like too much heat)
3 tablespoons freshly chopped coriander salt, to taste
Fish tacos-
One teaspoon powdered cumin and half a teaspoon paprika are added to four skinless fillets of firm white fish, such as haddock or hake (750-900g/1lb10oz-2lb total).
One teaspoon of sea salt flakes
One peeled garlic clove, coarsely chopped or grated
Two tablespoons of ordinary olive oil
Eight tortillas made of soft corn
To serve-
Two ripe avocados
One lime, pure juice, and two limes, sliced into wedges
salad greens of your choosing
1-2 tablespoons freshly chopped coriander
Fish tacos- step by step instruction guide
Step 1
For the fish, preheat the oven to 220C/200C Fan/Gas 7. Start by making the taco sides. Place the slices of red onion in a dish and pour the lime juice over them. Use a fork to thoroughly combine the onion and liquid. Actually, it would be ideal if you could finish this within a day, but even 20 minutes will suffice. In a small bowl, combine mayonnaise with gochujang paste (or another spicy sauce) to make the hot sauce. Put aside.
Step 2
Place the canned sweet corn in a dish to make the corn relish. Add the chopped coriander, chilli, and salt to taste to the sweetcorn. Stir everything thoroughly, then put aside.
Place the fish fillets in a shallow roasting tray after cutting them in half lengthwise to allow for long fingers. Sprinkle the fish fillets with a mixture of cumin, paprika, and salt. In a small bowl, combine the oil and garlic. Depending on the thickness of your fillets, bake the fish in the oven for 8 to 10 minutes after drizzling it with the garlicky oil. Before removing the fish from the oven, make sure it is just cooked through.
Step 3
Once you’ve taken the fish out of the oven, keep it warm while you prepare the finishing touches. Turn off the oven and place the tortillas inside to gently warm in the fading heat, softening them and making them perfectly pliable for serving. Meanwhile, peel, stone and slice the avocados, then spritz them with the juice of a lime to prevent browning and add a burst of fresh citrus flavour. Arrange the avocado alongside the other accompaniments so everyone can build their own tacos just the way they like them, creating a vibrant, crowd-pleasing spread that’s perfect for sharing.
Step 4
Arrange the fish on a serving plate, lined with salad leaves if desired, and sprinkle generously with freshly chopped coriander for a burst of colour and freshness. Bring it to the table alongside the warmed tortillas and your selection of accompaniments, allowing everyone to build their own tacos exactly to their taste.
