Delicious creamy pasta- ingredient list!
150ml/¼ pint of double cream and 400g/14oz of dry spaghetti
One little clove of smashed garlic or half a teaspoon of garlic powder
25g/1oz of finely shredded Parmesan (or a comparable vegetarian hard cheese), plus more salt and freshly ground black pepper for serving
Delicious creamy pasta- step by step instruction guide!
Step 1
Half fill a large saucepan with water, making sure there’s enough room for the pasta to move freely as it cooks. Add a generous amount of salt to season the water well, then place the pan over a high heat and bring it to a rolling boil. Once the water is bubbling vigorously, carefully add the pasta and give it a quick stir to prevent it from sticking together at the start of cooking.
Step 2
Cook the pasta for 10-12 minutes, or follow the timing on the packet instructions if it differs, until it is just tender with a slight bite (al dente). Stir occasionally throughout cooking to ensure even cooking and to stop the pieces from clumping or sticking to the bottom of the pan. When the pasta is ready, it should be soft enough to eat but still hold its shape well, making it perfect for coating in a sauce.
Step 3
Just before the pasta is ready, pour the double cream into a small saucepan and place it over a low heat. Add the garlic and gently warm the mixture, bringing it to a very light simmer while stirring constantly to prevent it from catching or separating. Take care not to let it boil, as you want the cream to stay smooth and silky.
Step 4
Once the garlic has infused into the cream, add around 100ml/3½fl oz of the pasta cooking water, which will help loosen the sauce and allow it to cling beautifully to the pasta. Then add the grated Parmesan and stir continuously until it has fully melted into the sauce, creating a rich, glossy texture. Continue stirring until everything is well combined and the sauce is smooth and creamy. Finally, season to taste with salt and freshly ground black pepper, adjusting as needed to balance the flavours.
Step 5
Drain the pasta carefully in a colander, allowing the hot water to run off completely and safely. Give it a gentle shake to remove any excess liquid, but don’t rinse it under cold water, as the starch left on the pasta helps the sauce cling better and creates a silkier finish. Once drained, return the pasta to the pan it was cooked in while it is still warm, so it stays hot and ready to absorb the sauce more effectively when mixed together.
Step 6
Pour the creamy sauce over the pasta and toss everything together thoroughly, making sure every piece is evenly coated in the rich, velvety sauce. Stir well so the sauce seeps into the pasta and creates a smooth, cohesive dish. If the mixture seems a little thick, you can loosen it with a small splash of the reserved pasta cooking water until it reaches your desired consistency. Serve immediately while hot, finishing each portion with a generous sprinkle of extra grated cheese on top for added richness and flavour.
Delicious creamy pasta- recipe tips!
You can use any kind of cheese you like for this sauce, depending on how bold or mellow you want the flavour to be. Mature cheddar and blue cheeses both work especially well, giving a stronger, more savoury depth to the dish. If you prefer a milder cheese, you can absolutely use that too-just add a little extra to make sure the sauce still has a full, rounded flavour and doesn’t taste too subtle.
If you don’t have double cream, there are several easy substitutes that still give a deliciously creamy result. Single cream or crème fraîche both work well and will keep the sauce smooth and rich, though slightly lighter in texture. Soft cheese, such as cream cheese, is another great alternative. It’s naturally richer than cream, so you only need around 100g/3½oz, and you may want to loosen the sauce with an extra splash of pasta cooking water to keep it silky and easy to coat the pasta evenly.
To add freshness and extra layers of flavour, you can also incorporate herbs and seasonings. If you have any fresh herbs to hand-such as parsley, basil, or dill-finely chop them and stir them into the sauce just as you combine it with the pasta so their flavour stays bright. For a little heat and extra kick, you can mix in dried chilli flakes or sliced fresh chilli. Finely sliced spring onions also work beautifully, adding a mild sharpness and a subtle crunch that balances the creaminess of the sauce.
