One avocado, peeled, stone removed, and roughly diced flesh ½-1 lime, juice only, to taste
One teaspoon of olive oil, salt, and freshly ground black pepper

Two little tortillas made with flour
One tablespoon of olive oil
½-1 tablespoon harissa paste
Two free-range eggs, salt, and freshly ground black pepper
A little handful of chopped fresh coriander for garnish

Delicious breakfast tacos- step by step instruction guide!

Step 1
Place the avocado into a medium-sized bowl and mash it using a fork until it reaches your preferred texture. Add the lime juice, oil, a pinch of salt and a few grinds of black pepper, then stir everything together until well combined. Continue mixing until the seasoning is evenly distributed throughout the avocado. Taste the mixture and adjust the seasoning if needed by adding a little more salt, black pepper or lime juice to suit your preference. Once combined and seasoned to your liking, set the avocado mixture aside while you prepare the remaining ingredients for the breakfast tacos.

Step 2
To make the tacos, place a dry frying pan over a medium heat and leave it to warm up for 1-2 minutes before adding the tortillas. Once the pan is hot, place a tortilla into the pan and toast for 30-45 seconds on the first side until lightly warmed and beginning to colour in places. Turn the tortilla carefully using tongs or a spatula and toast the other side for a further 30-45 seconds. The tortillas should be lightly golden and heated through, while still remaining soft and flexible enough to fold easily without cracking or breaking. Repeat the process with the remaining tortillas, adjusting the heat slightly if needed to prevent them from burning. As each tortilla is finished, transfer it to a plate and keep them stacked together to help retain warmth while you prepare the filling and assemble the tacos.

Step 3
Add the oil and harissa paste to a small bowl and stir together thoroughly until smooth and fully combined. Continue mixing until the harissa paste has completely blended into the oil, creating a rich, loose harissa oil that can be easily spooned or drizzled over the tacos later. If the harissa paste is quite thick, use the back of a spoon to press and break up any lumps while stirring to help create a smoother consistency. Make sure the mixture is evenly combined so the flavour is distributed throughout the oil. Once mixed, leave the bowl to one side and allow the flavours to sit together while you continue preparing the remaining ingredients for the tacos.

Step 4
Return the frying pan to a medium heat and add a generous drizzle of the prepared harissa oil, allowing it to heat for a few seconds in the pan. Carefully crack the eggs into the pan, spacing them apart slightly, and fry for 3-4 minutes until the whites are fully set and the edges are beginning to turn crisp and golden.
