Creamy spicy pasta- ingredient list!
Two tablespoons of butter
2 tablespoons extra virgin olive oil ½ coarsely chopped onion
Four cloves of finely chopped garlic
One teaspoon of dried chilli flakes
200g/7oz puréeed tomato
5 tablespoons vodka, 300 millilitres or half a pint of double cream, 400 grams or 14 ounces of dried pasta, like rigatoni, 50 grams or 1 ounce of grated Parmesan (or a comparable vegetarian hard cheese), plus additional for serving, salt, freshly crushed black pepper, and a small handful of basil leaves
Creamy spicy pasta- step by step instruction guide!
Step 1
Melt the butter and olive oil together in a large frying pan over a medium heat, allowing the butter to melt completely and combine with the oil. Add the finely chopped onion, season generously with salt and black pepper, and reduce the heat to medium–low. Stir everything together to ensure the onion is evenly coated in the buttery oil, then leave it to cook gently for around 5 minutes, stirring occasionally to prevent it from catching on the bottom of the pan. You want the onion to soften and become translucent without browning, as this helps create a delicious flavour base for your vodka pasta. Take your time with this step, as gently cooking the onion brings out its natural sweetness and adds extra depth to the sauce.
Step 2
Add the minced garlic and chilli flakes to the pan, stirring them into the softened onion until everything is well combined. Cook for around 1 minute, stirring frequently to prevent the garlic from burning, until fragrant. This helps release the flavours of the garlic and chilli, giving the sauce a delicious, aromatic base with a gentle kick of heat. Next, turn the heat up to medium and add the tomato purée, stirring it through the onion, garlic and chilli mixture until everything is evenly coated. Season with a little more salt and black pepper to taste, then allow the tomato purée to cook for around 5 minutes, stirring frequently to stop it sticking to the bottom of the pan. As it cooks, the purée should begin to darken in colour and caramelise slightly. This step is key to building a rich, deep tomato flavour, helping to remove the raw taste of the purée and giving your spicy vodka pasta that delicious, full-bodied sauce.
Step 3
Pour the vodka into the pan and stir well, making sure to scrape up any browned bits from the bottom using your wooden spoon. These little bits are packed with flavour and will help create a deliciously rich sauce. Allow the mixture to cook for around 3 minutes, stirring occasionally, so the vodka can reduce slightly and blend with the caramelised tomato purée, garlic, onion and chilli. You should notice the sauce becoming more fragrant as the flavours start to come together. Next, pour in the cream and stir thoroughly until it is fully incorporated, transforming the mixture into a smooth, creamy tomato sauce with a beautiful colour. Make sure to scrape around the edges of the pan so that all the flavourful ingredients are mixed through evenly. Once the sauce is silky and well combined, remove the pan from the heat to prevent the cream from overheating. You should be left with a rich, velvety sauce that balances the sweetness of the tomato with the gentle warmth of the chilli, ready to be combined with your pasta.
Step 4
As directed on the package, cook the pasta in boiling salted water until it's al dente. Save 200 ml/7 fl oz of the cooking water after draining. Put the sauce back on the hob over medium-low heat. Add a ladleful of the pasta cooking water, the pasta, and the Parmesan. If necessary, use a little more pasta water to loosen the spaghetti after it has been cooked and mixed until it is glossy and fully covered. Garnish with freshly ground black pepper, Parmesan, and basil before serving.
