One teaspoon rapeseed oil, 80g/3oz of coarsely chopped button mushrooms, 32g/1oz of roughly chopped reduced-fat smoked bacon medallion, and two thinly sliced spring onions
One finely sliced garlic clove, half a small lemon, juice only, one level tablespoon half-fat crème fraîche, 30g/1oz of wholemeal or granary bread, salt, and freshly ground black pepper, to taste
One tablespoon of freshly chopped chives (optional)

Creamy garlic mushrooms breakfast recipe- step by step instruction guide!

Step 1
Heat the oil in a small frying pan over a medium heat. Once the oil is hot, add the sliced mushrooms, chopped bacon, spring onions and crushed garlic to the pan. Stir everything together and cook for 1-2 minutes, stirring occasionally, until the bacon begins to cook and the garlic and spring onions become fragrant.

Add the lemon juice to the pan and stir well, making sure it coats the mushrooms and other ingredients. Reduce the heat to low and cover the pan with a lid.
